The gelatinisation process increases starch susceptibility to enzymatic breakdown compared with raw starch. This allows starch to be digested more readily in the small intestine, while also influencing its utilisation within the rumen in ruminant animals. As a result, more starch can be made available for digestion and absorption, with less remaining for fermentation in the hindgut.
